Pancit Gisado with sardines -- Yes SARDINES!

Pancit is one of the easiest and common merienda and party dishes of Pinoy. But in this recipe we can use sardines instead of chicken. Perfect for tight budget family!

Ingredients:

  • 1 lb. Sotanghon [vermicelli] bihon

  • 3 tbsp. oil

  • 6 cloves garlic, minced

  • 1 medium size onion, chopped

  • 1tbsp. ground black pepper

  • 1 big can Salmon sardines

  • 1 big carrot, sliced

  • 1 cup Celery, chopped finely

  • Green beans, thinly sliced

  • 1 medium size Cabbage, thinly sliced

  • 5 tbsp. soy sauce

  • 3 to 4 cups water

How to cook:

  • In a large pot, saute the garlic and onion

  • Add the sardines then let cook for 2 minutes

  • Put in the carrots, green beans, and celery. Simmer for a few minutes then add the cabbage.

  • Remove all the ingredients in the pot except for the liquid and set them aside

  • In the pot put the remaining cups of water and add the soy sauce and the ground pepper. Mix well

  • Add the vermiceli bihon ( make sure to first soak it in water for about 10 minutes) and mix well. Cook until liquid evaporates completely.

  • Put-in the vegetables and sardines mixture that were previously cooked and simmer for a minute or two

  • Serve hot and enjoy!
